Let's Eat!

WELCOME!

This is my very first post, my very first blog, my very first venture into this "world". I wanted a place to write about important events, musings, recipes, D.I.Y. and everything else. 


For my first post, I thought I'd share some recipes. I am a self-proclaimed master of last-minute, budget, simple, fast cooking. I love good food, but I rarely have time (or energy!) to make extravagant meals. I also have a picky little man and a very hungry hubby. I somehow always manage to overcome these challenges. I also have a strict budget depending on the month that I stick to. I use off-brand/generic products as well. Hope you like these as much as my family does. You might not have heard of some, but I promise they are tried and true! Try them all!

This first recipe comes form my hubby. He use to make it when he was a bachelor and now we eat it as a family!

Tuna and Noodles
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup milk
1 cup peas (I just use a whole can)
2 (6 ounce) cans canned tuna, drained
2 cups cooked pasta, I used egg noodles, but any will do
Preheat oven to 400°F
Mix soup, milk, peas, tuna and cooked noodles then transfer to a casserole dish.
Bake at 400°F for 15 min (may vary a few minutes either way depending on your oven).
Let cool 5-10 minutes before serving.


 
Lazy Pumpkin Pie (aka: Pumpkin Pie Fluff): (This Recipe comes from my mom)
1 can of pumpkin pie with spices
2 small packages of instant vanilla pudding mix
1 16oz tub of cool whip (softened)
1 graham cracker crust
Mix together pumpkin and dry pudding mix. Fold in cool whip. Pour into the pie crust. 
Can be eaten right away or chilled in the refrigerator until ready to serve.


Lazy Cake Cookies: (Also from my mom!)
1 box yellow or white cake mix
2 eggs beaten
5 T melted butter
2 C M&M's, mini chocolate chips, coconut, butterscotch chips, nuts, etc.

Mix together, put in a 9x13 pan and bake at 350 for 20 min!

Easy Homemade Barbeque Sauce:
2 1/2 c. ketchup
1 1/2 c. brown sugar
1 tbsp. mustard
1/4 c. onions, diced 

Mix ingredients together, use as desired. (sometimes I double or triple this.)

Super Easy-Super Lazy Chicken Enchiladas
1-2(BIG) can/s of Canned Chicken
Chili Powder (to taste)
Sour cream (I use a whole med. Container or less... what ever is in the fridge.)
4 cups (16 oz.) shredded Cheese-or more!
Tortillas
Preheat oven to 375.
Combine chicken, Chili Powder, 3 cups cheese and sour cream in a bowl. Put the mixture in tortillas- don't over stuff them, then roll and place seam side down in a baking dish, Bake for 30-40 minutes at 375 degrees. Sprinkle with remaining cheese last 5 min to melt.
